
Gennaro Rapido, former head pizza chef at Gino Sorbillo's restaurants, has decided to fulfill his dream of opening a permanent pizzeria in Milan after years of traveling from one country to another. His decision to settle down was spurred by the health emergency that has affected the entire world, but it was also an opportunity to embark on a new adventure that had always been on his mind during his flights. There's no better city than Milan to open a pizzeria, one of the places where the art of pizza is experiencing a surge in popularity. We're sure Gennaro will be eager to offer his delicious pizzas to the people of Milan and beyond.
The Lombardy capital is rapidly changing: from a city where you can eat pizza of (not always) adequate quality, to a launching pad for professionals dedicated to researching flours, doughs, and toppings, with surprising results in terms of both technique and flavor. Rapido is no exception, taking advantage of the time available between the first and second lockdowns to set up his own restaurant, A' Rote e Carrett, which opened on December 7, 2020, in Milan's Città Studi neighborhood.
